Pasta salad with garden fresh vegetables is easy to make ahead.
2 cups uncooked macaroni or other pasta
1 large tomato, quartered and thinly sliced
1 medium green pepper, quartered and thinly sliced
1 cup cheddar cheese, coarsely shredded or finely diced
1/2 cup green onions, chopped fine]
1/2 black olives, pitted and sliced
1/2 Caesar or vinaigrette salad dressing
Cook the macaroni according to package directions. Prepare the vegetables while the macaroni cooks.
Combine all ingredients and pour the dressing over all. Toss to combine. Chill well before serving; serves 6 - 8.
