Diet Bran Muffins

This tasty banana bran muffin recipe won't blow your diet. Makes a dozen muffins.

Preheat oven to 375°.

1 1/2 oz bran
1 cup skim milk
1 tsp cinnamon (optional)
sweetener equivalent to 1 tbsp sugar
2 tsp baking powder
1 mashed ripe banana
2 eggs
1 tsp vanilla
1 tsp molasses
1 tsp soda
1/4 cup plain yogurt

  1. Dissolve soda in yogurt.
  2. Mix dry ingredients in a bowl; stir in liquid ingredients.
  3. Divide spoonfuls of batter into a non-stick muffin tin.
  4. Bake at 375° for 15 - 20 minutes or until toothpick comes out clean.

Six muffins are equivalent to 1 bread serving, 1 protein, 3/4 milk, 1 fruit and 10 optional calories.
