In many homes, brewing tea is a comforting ritual. Here's how to make good tea.
- Use a teapot of china, pottery or heat resistant glass. Wash with soap and hot wanter and rinse well after each use.
- Heat the teapot just before making tea by filling it with hot water. Let it stand until the pot is well heated, then empty it.
- Measure tea into the pot, allowing 1 to 1 1/2 teaspoons of tea per cup of water. If using tea bags, follow directions on the package.
- Add freshly boiled boiling water.
- Cover pot and let tea steep for five or six minutes. Never let it boil.
- Strain into another heated pot or into cups.
- Optional: Serve with milk or thin cream, slices of lemon and sugar.
- If serving tea with milk, pour milk into the cup first, then the tea. This reduces temperature shock to your good china cups.
