Corn Flakes Brittle

A sweet, nutty treat for festive occasions. Better hide it from the kids!

3/4 cup granulated sugar (175 ml)
1/2 cup corn syrup (125 ml)
1/4 cup butter (50 ml)
6 cups corn flakes cereal (1.5L)
1 cup salted mixed nuts or unblanched almonds (250 ml)

  1. Combine sugar, corn syrup and butter in a large, heavy saucepan. Cook over medium heat, stirring constantly, until sugar is completely dissolved and mixture starts to boil. Remove from heat.
  2. Add cereal and nuts. Stir until well coated.
  3. Spread mixture evenly over buttered cookie sheet to about 1/4" thickness. Bake at 300° F (150° C) for 20-25 minutes. Cool.
  4. Break into pieces and store in airtight container.
  5. Hide from the kids!
