These muffins are delicious served hot with fresh honey! Yield: 12 muffins.
Preheat oven to 425° F.
1 cup pastry or all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup cornmeal (option: substitute up to two tablespoons soy grits)
1 egg
1 +1/4 cups milk
1/3 cup melted shortening or vegetable oil
- Stir flour with baking powder and salt. Add sugar, cornmeal, and mix well. Beat egg with milk and fat. Add all at once to dry ingredients, and stir just enough to mix. Do not overmix; it's okay if the batter is a bit lumpy.
- Pour muffin batter into a greased 2-inch muffin pan and bake at 425 F. for 20-25 minutes or until golden.
- Delicious served hot with honey!
