Blueberry Cream

Blueberries are good for you and make an irresistible dessert. This recipe makes 4 - 6 servings.

2 cups fresh blueberries or defrosted frozen blueberries
1/8 teaspoon salt
1 large egg white
1 cup diced marshmallows
1 cup whipping cream, whipped
1/2 teaspoon vanilla extract
3 tablespoons sugar (or equivalent sweetener)

  1. Wash and drain blueberries.
  2. Add salt to egg whiles and beat them until stiff. Fold in marshmallows, 1 1/2 cups of the blueberries, whipped cream, sugar and vanilla extract.
  3. Chill until ready to serve.
  4. Just before serving, crush remaining 1/2 cup of blueberries and fold into the mixture. Mix only slightly so the mixture has stripes.
  5. If desired, save a few whole berries to garnish each serving. A raspberry or slice of strawberry is attractive, too.

Makes 4 cups.
