A creamy fruit dessert to serve in your most elegant dessert dishes. Made in advance and garnished at time of serving.
Prepare at least two hours in advance. Makes 4 - 6 servings.
Ingredients
375 ml (1 1/2 cups) frozen fruit chunks, assorted
475 g (16 oz) ricotta cheese
60 ml (1/4 cup) white sugar
10 ml (2 tsp) orange zest, grated
60 ml (1/4 cup) orange juice
250 ml (1 cup) 35% cream
250 mL (1 cup) frozen berries)
To taste - icing sugar for garnish
Preparation
- Coarsely chop frozen fruit chunks and set aside.
- In a bowl, mix ricotta, sugar, orange zest, orange juice and the chopped frozen fruit.
- Whip cream until stiff.
- Fold whipped cream into the ricotta mixture.
- Pour mixture into dessert dishes and refrigerate for two hours.
- 15 minutes before serving, remove frozen berries from package.
- Just before serving, place the berries over each dessert dish and garnish with icing sugar. Serve immediately. Enjoy!
