Ricotta Fruit Dessert

A creamy fruit dessert to serve in your most elegant dessert dishes. Made in advance and garnished at time of serving.

Prepare at least two hours in advance. Makes 4 - 6 servings.

Ingredients

375 ml (1 1/2 cups) frozen fruit chunks, assorted
475 g (16 oz) ricotta cheese
60 ml (1/4 cup) white sugar
10 ml (2 tsp) orange zest, grated
60 ml (1/4 cup) orange juice
250 ml (1 cup) 35% cream
250 mL (1 cup) frozen berries)
To taste - icing sugar for garnish

Preparation

  1. Coarsely chop frozen fruit chunks and set aside.
  2. In a bowl, mix ricotta, sugar, orange zest, orange juice and the chopped frozen fruit.
  3. Whip cream until stiff.
  4. Fold whipped cream into the ricotta mixture.
  5. Pour mixture into dessert dishes and refrigerate for two hours.
  6. 15 minutes before serving, remove frozen berries from package.
  7. Just before serving, place the berries over each dessert dish and garnish with icing sugar. Serve immediately. Enjoy!
