Rainbow Cake

This recipe is gooey to make but very attractive on a tray of party dainties! No cooking needed.

1 pound icing sugar
1 pound dessicated coconut
1 15-ounce tin of sweetened, condensed milk (example: Eagle Brand)
pinch of salt
food coloring, red and green

  1. Combine all ingredients except food coloring in a large bowl and mix thoroughly. It will make a thick, firm dough.
  2. Divide dough into three parts. Add a few drops of red food coloring to one part and mix thoroughly. Add a few drops of green coloring to the second part and mix thoroughly. Leave the third part white.
  3. Spread the red mixture evenly to make a layer over the bottom of an 8" or 9" buttered pan. Spread the white mixture to make the next layer, and finish by spreading the green mixture for the top layer.
  4. Refrigerate until firm.
  5. Cut into small squares to serve. It's very rich!

This recipe freezes well.
