Cinnamon Cake

A rich, moist white cake topped with an unusual cinnamon icing.

Reheat oven to 350° F.

Cake:

1 cup sugar
1/2 cup margarine
1 cup milk
1/2 tsp baking powder
2 egg whites
1 1/2 cups flour

Cream sugar and margarine until smooth. Add remaining ingredients and mix well. Pour batter into nine-inch cake pan and bake at 350° for 25-30 minutes.

Icing:

1 tsp cinnamon
2 egg yolks
1/2 cup brown sugar

Mix thoroughly. When cake is baked, spread icing on the baked cake and put back in oven approximately five minutes until the icing turns brown and is no longer liquid.

For a flavor variation, try substituting whole grain flour for up to half of the white flour.
